A flour-dusted commercial kitchen in Lyon, France at 4:17 AM, where a 126-year-old sourdough starter named Geneviève is bubbling in a ceramic crock on a shelf directly above a faulty pilot light.

The bakery's head chef just quit via text, the Michelin inspector arrives in nine hours, and Geneviève — the oldest living sourdough starter in the Rhône-Alpes region — needs to be fed within the next forty minutes or she begins to die. The problem: the only flour left is an unmarked 25-kilo sack that might be tipo 00, might be semolina, and might be the high-protein bread flour Geneviève has eaten exclusively since the Dreyfus Affair. Double wants to feed her the mystery flour and keep baking. Bust wants to close the kitchen, drive to the only mill open before dawn in Villefranche-sur-Saône, and pray they make it back in time.
